Hard to Spoil Banana Bread

  • 1/3 cup Butter, soft

  • 1 cup Sugar

  • 2 Eggs

  • 1/4 cup Chopped Nuts

  • 3 Bananas, brown

  • 2 cups Flour

  • 1/2 tsp Baking Soda

  • 2 tsp Baking Powder

  • 1 cup Raisins

  • 1 tsp Vanilla

  • 1 tsp Salt

  • Nutmeg to taste

Mix all wet ingredients.

Mash with a potato masher

add Dry ingredients, besides raisins and nuts (or chocolate chips)

Mix until combined

Fold in raisins and nuts (or chocolate chips)

Foil bread pans & spray w/ nonstick spray

glass/ceramic only needs nonstick spray

Bake @ 350F until toothpick comes out clean (45 min for me)

Remove from pans while still warm

Let cool on wax paper 10 min.

Notes from the Chef:

OPTIONAL: chocolate chips instead of or with chopped nuts

Top with melted chocolate after cooling?
