Fancy Scrambled Eggs

6 eggs
3 Tbsp cold butter, cubed
1 Tbsp apple cider vinegar
salt and pepper to taste
chives/green onion (garnish)
Toast, three slices
crack all 6 eggs into a pot. put over a low flame.
add half the butter. stir consistently and ensure the eggs do not burn or stick to the bottom of the pan.
once the eggs begin to set, add the rest of the butter.
at the last instant, add the ACV and the salt and pepper.
Remove from heat. The eggs should be a lumpy texture that almost reminds you of cottage cheese.
Serve over toast. Should serve 3 people with no problem. Garnish with chives/green onion
Notes:
This isn’t the fluffy solid scrambled eggs you’re used to. These are not the scrambled eggs your mom used to make you as a kid. I couldn’t master all that homestyle jazz, so I tried a high brow version, and I’ve found that I like it! This is modified from a Gordon Ramsey recipe, which is why I say that. It’s not the same, since that one uses crème fraiche. I found using some apple cider vinegar as a substitute worked for me, so whatever.
