Khanom

  • 3 cups Sticky Rice (long grain gluntinous rice)

  • 1 can Coconut Milk

  • 2 Bananas

  • 1 Mango

  • 3 cups Sugar

  • Tinfoil or Banana Leaf

  • Steaming basket

Soak sticky rice for at least 4 hours.

Cut fruit into long, thin sections about 2 in.

Steam sticky rice in wetted steaming basket, covered, for 15min, flipping occasionally to evenly steam

Dump fully steamed sticky rice into large mixing bowl

mix in sugar and coconut milk

rip out small sections of tin foil to fold

place small portion of rice on foil

place desired fruit/filling on rice

fold appropriately

add all packets to the steaming basket

steam again for 15 min

serve hot or chilled.

Notes from the chef:

You can use red bean paste instead of the banana or mango. In fact, you can substitute a lot of different fillers.

THIS IS A GLUTEN FREE, VEGAN DESSERT. Depending on the filling. But if you’re just using fruit, it’s vegan.

I don’t know how to fold in the banana leaf. I cant describe how to fold the tin foil. Think origami. lol Try not to fold it too tightly. the steam needs to get in without the goopy mixture escaping. Placing the packets with their openings facing up helps.

The RATIO for SUGAR TO RICE is about 1:1. I use less sugar, and it turns out fine. The amount of coconut milk... I use a whole can for 3 cups rice 3 cups sugar. You can sort of figure it out. I use 2 Bananas and 1 mango. If you cut them into small sections and use less rice, you can make about 30 small packets of Khanom. The packets will be about the size of a small handful.
