Curry Tilapia

Curry Tilapia over a bed of white rice, covered with crushed cashews and a side of spinach mushroom

  • 3 Tilapia

  • 1 tsp Curry (yellow or red)

  • 1 can Coconut Milk

  • 1 Tbsp Brown Sugar

  • 1 tsp Fish Sauce (or Oyster Sauce)

  • Oil/Butter

  • Flour

  • Milk

  • Salt

  • Pepper

  • Jasmine Rice

  • Cashews/Peanuts

  • Veggies

Bread Tilapia in flour and milk

fry in skillet w/ oil or butter. 

Remove Tilapia from skillet once crispy. 

Season Tilapia w/ salt&pepper

pour 1/2 can coconut milk in skillet.

heat on med until frothy. 

pour rest of can into skillet. 

heat. add fish/oyster sauce, brown sugar, water, and curry. heat. 

Add tilapia back into sauce.

cover with sauce. 

heat on low 10-15 min. 

serve over jasmine rice w/ veggies and crushed cashews/peanuts

Notes from the chef:

You don't actually need to bread the tilapia.  It's time consuming and adds calories.  If you don't feel like going through the process, just season the fish and throw it in the skillet with some butter.

Roll the crushed cashews/peanuts in the left over butter from frying the tilapia to add some extra flavor to them.  Do this before adding the coconut milk to the skillet.
