Brie and Apple Stuffed French Toast

1 Large Honeycrisp Apple
1/4 cup Spiced Rum (captain morgan)
2 Tbsp Maple Syrup
1/8 tsp Vanilla
1 tsp Brown Sugar
1/4 tsp Cinnamon
1/8 tsp Nutmeg
Cook down Apples with sauce. Reduce sauce, and cook on low until apples are soft.
Bread
Eggs
Vanilla
Cinnamon
Mix eggs, cinnamon, vanilla, together in large bowl.
Cover bread in mixture. cook the toast on a hot skillet.
Cover the Cooked slices in brie cheese. then slather apple mixture on top (while it is hot. this will melt the cheese. Place another piece of french toast on top. Cover in maple syrup and serve with powdered sugar and a scoop of vanilla bean ice cream.
